- 4 boneless thick pork chops (1 1/2-2 inches thick)
- 4 oz cream cheese (softened)
- 1/4 c Beecher’s Flagship Handmade Cheese, shredded
- 1/4 c parmesan cheese, shredded
- 1 c spinach chopped
- 2 cloves garlic minced
- 1 TBSP fresh parsley, chopped
- 2 TBSP Italian seasoning
- 1/4 Tsp kosher salt (optional as the Beecher’s cheese is salty)
- 1/2 Tsp white pepper
- 2 TBSP cooking oil (we use Avocado)

Directions:
- Preheat your oven to 400° F.
- In a mixing bowl, combine the softened cream cheese, Beecher’s cheese, parmesan, spinach, garlic, parsley, Italian seasoning, salt, and white pepper.
- With a sharp paring knife, carefully cut a slit in the widest side of the pork chop to create a pocket for the cheese mixture. Be careful not to cut through the sides of the chop. Repeat process with all pork chops.
- Lightly sprinkle chops with black pepper. Then, divide the cheese mixture evenly and stuff the pork chops.
- Heat the cooking oil in an oven-safe skillet over medium heat. Pan-sear the pork chops for 5 minutes on each side. After chops are seared, place them in the oven. Bake for 20 minutes.
- Remove the pork chops from the oven and gently cover them with aluminum foil. You want the internal temperature to be 145° F. Rest chops for 10 mins, then serve.
