I have such a big sweet tooth which isn’t necessarily a positive thing. Eating too many sugary foods can be bad for maintaining a healthy diet. My sister in law Bobbi Jo recently shared this chocolate covered dates recipe with me, which is also known as healthy snickers.
At first, I was skeptical…could they really be as tasty as snickers? Let’s dive into the recipe to find out!
Chocolate Covered Dates Recipe
In less than 20 minutes you can have a delectable healthy snack that tastes oh so delicious! We’re sharing a peanut butter filled chocolate covered dates recipe, however, you can easily swap the filling for almond butter or another version you prefer.
Measurements with easy to follow printable directions are at the end of the post.
Ingredients:
- Medjool dates
- peanut butter (crunchy or creamy)
- dark chocolate chips
- crushed peanuts
- olive oil
Directions:
- Cut each date in half and remove the pit, then fill each half with peanut butter. Set aside.
- Place the dark chocolate chips and olive oil in a microwave-safe bowl and melt in the microwave in 15-second increments, stirring for up to 1 minute between increments.
- Place peanut butter filled date halves on a baking sheet lined with parchment paper. Using a spoon, drizzle chocolate to coat the dates. Next, sprinkle crushed peanuts on top of each date.
- Place the dates in the fridge for up to 20 minutes to allow the chocolate to harden. Enjoy!
The hard part will be trying to resist eating them all in one sitting! Because that defeats the purpose of a healthy snack, right?
These chocolate covered dates are such a great alternative to a candy treat while still satisfying your sweet tooth. Take a few with you for an after gym snack or a 3’oclock slump at work, and store the rest in an airtight container until you’re ready to eat them.
