Today’s recipe will have you craving seafood! Shrimp is rich in protein, and low in calories too. It also has an impressive assortment of nutrients. Why not whip up this seafood pasta dish for dinner tonight?

Seafood Pasta: Tomato & Garlic Shrimp Gnocchi
6 oz. Gnocchi pasta
2 Cup mini shrimp
1 Tsp garlic powder
1 Tsp onion powder
Pinch chili powder
1 Tbsp chopped parsley leaves
1 ½ Tomatoes
4 Garlic cloves, minced
2 Lemons juiced
Salt and pepper to taste
Parmesan cheese to taste
In a zip bag, marinate the shrimp with lemon juice, onion powder, garlic powder, chili powder, salt, and pepper. Place in the fridge 3 hours prior to cooking.
Set a pan over medium-high heat, and cook the olive oil and garlic. Stir for 2 minutes or until fragrant.
Add the mini shrimp and juice, cook for 2 – 3 minutes. (Until pink) Set aside.
In a food processor, add the tomatoes, onion, olive oil, salt, and pepper. Process until smooth. Set aside.
In a pot, bring salted water to a boil, place the pasta and cook until the gnocchi is floating (2-3 minutes).
Drain the water, add the tomato sauce, shrimp, and mix.
Divide into two serving bowls, garnish with the Parmesan cheese and parsley.
Serve and enjoy!
Tip: If pressed for time skip the marinade.
