Ingredients
12 Medjool dates, peanut butter (crunchy or creamy), 1/4 cup crushed peanuts, 3/4 cup dark chocolate chips, 1 teaspoon olive oil
Instructions
Cut each date in half and remove the pit, then fill each half with peanut butter. Set aside. Place the dark chocolate chips and olive oil in a microwave-safe bowl and melt in the microwave in 15-second increments, stirring for up to 1 minute between increments. Place peanut butter filled date halves on a baking sheet lined with parchment paper. Using a spoon, drizzle chocolate to coat the dates. Next, sprinkle crushed peanuts on top of each date. Place the dates in the fridge for up to 20 minutes to allow the chocolate to harden. Enjoy!
