Ingredients
For Stir Fry: 1 yellow & 1 red bell pepper (julienned)1 small crown broccoli (bite-size pieces)1 sweet onion (sliced)1 med yellow & 1 med green zucchini (julienned)1-10 oz bag matchstick carrots4 oz crimini mushrooms (julienned/diced)1 lb mung bean sprouts2 small sirloin steaks (slice against the grain strips)Pink Himalayan salt and ground pepperAvocado oil
For Sauce: 1 cup chicken bone broth (or vegetable)2/3 cup low sodium soy sauce1/2 cup hoisin sauce2 Tbsp fish sauce2 tsp rice vinegar2 Tbsp sesame oil4 Tbsp fresh ginger (minced)6 cloves garlic (minced)2 Tbsp cornstarch
Instructions
Salt and pepper beef strips. Heat 1-2 tablespoons avocado oil over medium heat in large pan and cook beef for 4 minutes, remove from pan and set aside.• In same pan with beef juices add 1 tablespoon avocado oil. Once oil is heated add onions and sauté for 5 minutes.• Next add all the other veggies except the bean sprouts. Cook another 8 mins, stirring occasionally so nothing sticks to the bottom.• While veggies are cooking, mix all sauce ingredients together, whisk and set aside.• Add sprouts, sauce mixture, and beef back to pan. Cook another 8-10 more minutes.• Serve as is or over white rice.
