Ingredients

4 Tbsp avocado oil (divided, )2 Leeks (white & part of green) rinsed & chopped, 1/2 cup fresh or frozen whole Cranberries, 1 Granny Smith apple, peeled, cored & diced, 4 sprigs fresh rosemary, chopped, 2 Tsp dried Oregano, Salt & pepper, 1 1/2 cups seasoned bread cubes, 1/2-1 cup reduced-sodium chicken broth, 4 (1 1/2-2 inch thick) boneless pork chops

Instructions

Preheat oven to 400° F.Heat avocado oil in a large oven-proof skillet over medium heat. Add leek, cranberries, apples, and sauté for 10 minutes, until cranberries pop open. Add rosemary, oregano, and sprinkle salt and pepper, mix well. Remove from heat, add bread crumbs and enough chicken broth to moisten bread crumbs. Mix well and set aside. Take pork chops, slice horizontally to create a deep pocket (do not cut through any other side). Season pork chop inside and out with salt and pepper. Stuff pork chops with cranberry-apple mixture, using fingers pack stuffing tight. In oven-safe skillet, heat 2 Tbsp avocado oil over medium heat then add stuffed pork chops. Cook on one side for 6 minutes or until browned. Flip pork chops and transfer to pre-heated oven for 15-20 minutes. The stuffed pork chops internal temperature should be 145° F.Serve and enjoy!
