Ingredients

1 c old fashion oatmeal oats (dry, )1/2 c dark chocolate chips (60 or 72% cacao), 2/3 c unsweetened coconut flakes, 1/2 c whole health seeds (flax, chia, and hemp seed blend), 1/2 c almond butter, 1 tsp vanilla extract, 8 Medjool dates (pitted), 1/2 c almond milk

Instructions

In a food processor, add dates, vanilla extract, and almond milk, pulse or press low until dates are minced in small pieces and blended with almond milk. In a separate large bowl add oats, chocolate chips, coconut flakes, seeds, almond butter, and date mixture, stir until ingredients are all combined. Place in fridge to firm up for about 15 minutes then using your hands roll into 1-inch balls (makes about 15-16 balls). Place back in the fridge for another 15 minutes, then enjoy. You can keep the energy balls in an air-tight container and store in the fridge for up to a week. Freeze for longer-term storage.

Tip: Don’t have dates on hand? Try an alternative like cranberries. Want more chocolate? Add chocolate protein powder or cocoa powder to the mix!
