Ingredients
1 Cup broccoli florets, 4 Cherry tomatoes, 3 Tbsp Parmesan cheese, ½ Red onion, ¼ Cup green pepper, 2 Cups lettuce
For the dressing: ¼ Cup mayonnaise, 2 Tbsp onion, 1 Garlic clove, ½ Tsp salt, ½ Tsp pepper, 1 Tbsp parmesan cheese
Instructions
For the dressing, mix the mayonnaise, onion, garlic clove, salt, pepper and Parmesan cheese in a food processor. Pulse until everything is well incorporated and creamy (around 3 minutes). Set aside In a pot bring water to a boil. Incorporate the broccoli florets in a steamer basket and steam until tender (about 5 minutes). Remove from heat and let them cool until they are no longer hot to the touch. On a chopping board cut the tomatoes, red onion, bell pepper, and lettuce. Add everything to a bowl and mix well, drizzle with dressing and top with Parmesan cheese. Serve and enjoy!
