Ingredients

4 bell peppers, cut in half, remove seeds, 16 oz organic ground chicken, cooked, 1 cup quinoa, cooked, 3 cups mozzarella cheese shredded, divided, 1/2 cup parmesan cheese shredded, 3-4 cloves garlic, minced, 2 cups marinara sauce, 1/4 cup chopped parsley, 1/4 tsp crushed red pepper flakes, 1/2 tsp kosher salt, 1/2 tsp ground black pepper, 1/2 cup organic chicken broth

Instructions

Preheat oven to 400ºF. Cook ground chicken until no longer pink, set aside. Cook quinoa according to package, and set aside. Cut bell peppers in half, remove seeds, and place in 9×13 baking dish, set aside. In a large bowl, add 1 1/2 cups shredded mozzarella, parmesan cheese, garlic, marinara, parsley, red pepper flakes, salt and pepper. Mix until all ingredients are combined. Next, add cooled chicken and quinoa, and mix together. Spoon chicken mixture into bell peppers. Then pour chicken broth into the baking dish and cover with foil. Place stuffed peppers in oven and bake for 45-50 minutes. Carefully remove foil, add the remaining mozzarella cheese, and sprinkle more parmesan cheese. Bake for 10-15 more minutes or until peppers are tender and cheese is melted. Garnish with parsley and enjoy!
