Ingredients
12 eggs, 12 slices of Black Forest ham, 1/4 cup almond milk (or any liquid), 1/3 cup spinach chopped, 1/3 cup bell pepper, Colby Jack cheese, shredded, Olives sliced (optional), Salt and pepper to taste
Instructions
Preheat oven 375°F Spray nonstick cooking spray on muffin pan. Stuff 1 slice of ham in each muffin holder. In mixing bowl add eggs, almond milk, spinach, bell pepper, salt, and pepper. Whisk ingredients together. Add egg mixture to ham cups. Top with shredded cheese and olives. Place in oven and bake 35-40 minutes.
Recipe Notes
Tip: swap out olives for mushrooms, crumble some bacon and add bacon bits, or swap the spinach for broccoli. You can switch up the ingredients to keep this breakfast dish fresh and new.
