For Fajitas: 1 medium onion sliced thin, 3 bell peppers (any color) sliced thin, 1 zucchini sliced thin, 1-2 portobello mushrooms sliced thin, 1 lime juiced (about 1 tbsp)
Instructions
Thinly slice onions, peppers, zucchini, and mushrooms, and place in a bowl. Set aside. In a small bowl add all fajita seasonings and mix together. Preheat oven 375° FOn a large baking sheet cover with foil or parchment paper. Place veggies on the covered baking sheet.Drizzle olive oil, lime juice, and 2 tablespoon of seasoning over the veggies. Using your hands stir the veggies. Place veggies in a pre-heated oven and cook for 20-25 minutes. Serve with tortillas/lettuce wraps, sliced avocado, extra lime, sour cream, and salsa.
