Ingredients
2 (13.66 fl oz) cans organic coconut milk (unsweetened, )1 cup organic almond milk (original), 6 Medjool dates (pitted), -Omit if not a fan, Himalayan pink salt (pinch of salt), 1 (0.66 oz) package organic fresh mint, 1 tsp vanilla extract, 2 large handfuls organic baby spinach, 1 (11.5 oz) bag dark chocolate chips (63% cacao)
Instructions
In a blender, add all the ingredients except for the chocolate chips. Blend on high until all ingredients are mixed well and smooth. Pour the mixture into a freezable container and fold in the dark chocolate chips, stir and place in the freezer. Stir ice cream mixture every 60 minutes until the ice cream is fully frozen. Once the ice cream is frozen, scoop it up and serve in a bowl, cone, or over a warm brownie and enjoy!
Recipe Notes
Tip: Implementing spinach gives the homemade ice cream its green color without using food coloring, plus it has nutritional benefits. You can also add peppermint extract if you want a mintier flavor.
