Ingredients
Ingredients for Lettuce Wraps: 2 lbs grass-fed ground beef, 2 heads butter lettuce, 1 Tbsp avocado oil, 1 sweet onion (diced small), 1 leek (white and part green), chopped, 1 (10 oz bag) matchstick carrots, 3 cloves garlic, minced, 1/2 Tbsp fresh ginger, minced, 1 Tbsp fresh lime juice, 1/2 c hoisin sauce, 3 Tbsp soy sauce (reduced sodium), 3 Tbsp rice wine vinegar, 2 Tbsp chili paste, 1 Tbsp sesame oil, 1/4 c peanut sauce (see recipe below), 2 c unsalted cashews chopped
For Peanut Sauce: 1 c crunchy natural peanut butter, 1/2 c sweet chili sauce, 1/4 c fresh lime juice, 2 Tbsp honey, 1 Tbsp sesame oil ,1/2 Tbsp fresh ginger, minced, 4 cloves garlic, minced, 1/4 c soy sauce, 1 Tbsp rice wine vinegar, 1 Tbsp chili paste, 1/2 Tsp kosher salt, 1/2 bunch cilantro ,1/2 c water (more or less depending on the consistency preferred)
Instructions
Begin with the peanut sauce – add all ingredients into a blender (I used my Nutribullet) and process until there are no lumps. Add more water if you want the sauce thinner. Set aside or in the fridge. For the lettuce wraps- in a mixing bowl, combine garlic, ginger, lime juice, hoisin sauce, soy sauce, rice wine vinegar, chili paste, sesame oil, and peanut sauce. With whisk stir until all ingredients are combined. Set aside. In a large pan add avocado oil, heat over medium heat. Add onions and leeks, cook 5 minutes, add carrots cook another 5 minutes. Add ground beef. Mix with veggies and cook until beef is no longer pink. Next, add the sauce mixture to beef and veggies, mix well, stirring until water evaporates and the sauce starts to caramelize about 10-15 minutes. Remove from heat and stir in chopped cashews. Rinse and dry butter lettuce leaves. Place leaves on plate and spoon meat mixture on top of lettuce. Drizzle with homemade peanut sauce. If you want more spice add sriracha. Top with cilantro (optional).
