Ingredients
1 pound mixture yellow & red potatoes, quartered, 1/2 head cauliflower (cut up in florets), 1 leek (white and some green parts) rinsed & diced, 1/2 cup shredded parmesan cheese, 1/4-1/3 heavy whipping cream, salt to taste
Instructions
Using Instant Pot and 2 cups water in pot, add quartered potatoes, cauliflower florets, and leeks to mesh basket. Set Manual timer for 10 minutes. Once the 10 minutes is up let Instant Pot naturally release for an additional 10 minutes. Remove mesh basket (watch out for steam), empty water from pan, and place potatoes, cauliflower, and leeks in empty pan or large bowl. With a hand potato masher or electric hand mixer, mix veggies with whipping cream (add small amounts at a time until you reach your desired consistency). Add salt and parmesan cheese, using a wooden spoon stir until well combined.
