Ingredients

2 (5oz) cod fillets, Olive oil, Kosher salt, Ground pepper, Fresh thyme, 2 tbsp butter, unsalted, Lemon wedges

Instructions

Drizzle olive oil on the fresh fish, sprinkle with salt, pepper, and fresh thyme, pat seasonings onto cod, and repeat on the other side. In skillet, melt butter over medium heat, add the fillet, after 1-minute spoon butter over top of fish, cook for 4-5 minutes on the first side, flip and cook for another 3-4 minutes, you want each side a nice golden brown. Serve immediately with a lemon wedge, and a side dish such as salad, or steamed veggies.

Recipe Notes

Tip: Cod should be flakey and moist. If your cod is tough or rubbery, that means you’ve overcooked it.
