Hot Chocolate Cocoa Bombs

Hot chocolate bombs are uber-popular this season and why not make them extra festive with this sweet snowman design!

Ingredients

1 - 30oz of Ghirardelli white chocolate melting wafers, 2 C of hot cocoa mix, 2 C Mini Marshmallows, 1 tube of orange icing, 1 tube of chocolate icing

Instructions

First, we recommend wiping down the inside of each silicone mold with a paper towel. This will allow your chocolate mold to have a shiny coat on it. Using a microwave-safe bowl, pour in some Ghirardelli melting wafers and microwave for 30-45 second intervals. Make sure to stir the chocolate after each heating cycle until completely melted and smooth. Spoon about 1-2 tbsp of the chocolate into the mold. Using the back of a spoon carefully swirl the chocolate to completely coat the inside of the mold – paying special attention to the rim. You are just making a solid chocolate layer (like the image below) so that it’s hollow in the center. Next, place the coated molds into the fridge for 5-10 minutes. Remove from the fridge and gently peel the silicone mold away from the hardened chocolate shell. TIP: We found it easier to cut the silicone molds so we could work with each one individually versus connected. Carefully place each mold onto the cookie sheet. You should now have 12 half-sphere molds. Scoop some of the melted chocolate into the piping bag and cut the tip.

Building the hot chocolate bomb: Scoop about 1 tbsp of the hot cocoa mix into the bottom of the sphere mold. Sprinkle in a few of the mini marshmallows. Then pipe a line of the melted chocolate around the edge of the bottom shell. Carefully place the top shell onto the bottom and gently hold the top to the bottom for about 30 seconds to allow the piped chocolate to harden to the top shell. Next, carefully pick up the cocoa bomb and make sure that there is no opening around the center of the shells. Now it’s time to build a snowman! Place the completed cocoa bomb back onto the cookie sheet, then scoop some orange icing into a piping bag and chocolate icing in another. Cut the tips off both piping bags and decorate your snowman cocoa bomb. Enjoy!
