One Pan Pork Chops and Apples

Ingredients

2 Tbsp olive oil - divided, 3 (1 1/2-2 inch) thick pork chops, 3/4 cup chicken stock, 1 tsp Dijon mustard, 1/2 tsp rosemary, 1/4 tsp thyme, 1/2 tsp kosher salt, 1/4 tsp black pepper, 2 medium apples - thinly sliced (I used honey-crisp apples), 1 small yellow onion - thinly sliced

Instructions

In a small mixing bowl, whisk together chicken stock and mustard, set aside. Spray chops lightly with olive oil, season both sides of pork chops with kosher salt and black pepper, and a little rosemary and thyme. Let sit 15-30 mins. Add 1 Tbsp olive oil to large heavy-bottomed pan (or skillet), and heat over medium heat. Add pork chops to pan, sear 5 minutes per side. (Chops will continue cooking in the sauce later) Move pork chops to a plate. Add remaining 1 Tbsp oil to the pan, then add apples and onions. Cook 5 minutes, stirring occasionally. Season with salt, pepper, rosemary, and thyme. Stir to combine. Pour in chicken stock mixture, then stir. Place pork chops back into the pan (between the apples and onions)Turn heat to low, cook 5 minutes, then flip chops, cook another 5 minutes. Flip again, cover and cook 10 mins, flip the last time and cook another 5-10 minutes or until pork chops are finished cooking.
