Ingredients
2 cups whole wheat couscous 3 cups chicken broth or vegetable broth 1/4 tsp kosher salt 1 tbsp butter 1 handful of baby spinach 1/2 cup cherry tomatoes, quartered 4 slices of bacon, crumbled balsamic vinegar and olive oil (optional)
Instructions
Cook the couscous as directed on the box. I cooked mine with 3 cups chicken broth, 1/4 tsp kosher salt and 1 tbsp butter. Once cooked, pour the couscous in a fine mesh strainer and run under water to remove the excess starch. Otherwise your couscous will be very sticky. Shake any remaining water from the strainer and pour the couscous in a large size bowl. Add tomatoes, bacon and baby spinach and toss. Optionally, before serving drizzle a bit of balsamic vinegar and olive oil over top. Enjoy!
