Whether you’re following the vegan diet, or just looking for a healthy breakfast recipe, this two-ingredient smoothie is both tasty and insanely easy to make. Mornings can be pretty chaotic with young kids at home. And it’s easier to grab something on-the-go, but it’s not usually the most nutritious option. That’s why we’re sharing this healthy vegan smoothie parents can whip up before heading out the door – just in time for back to school!
Two Ingredient Healthy Vegan Smoothie
Here’s what you’ll need:
- 2 cups Frozen Strawberries
- 1/2 cup Coconut Milk
- An immersion mixer or blender
- Fresh Berries to top the smoothie (optional)
Add frozen strawberries to a blender cup or bowl, then top with coconut milk and blend until smooth. If you prefer something a bit sweeter, add 1/4 cup of sugar and blend ingredients. Pour into a glass and top with fresh blackberries, blueberries or strawberries (whatever you have on hand), and enjoy!
Now you’re ready to grab and go with something delicious in hand! This healthy vegan smoothie will help curb your appetite for something from a drive-thru that’s way more calories and less nutritious. Plus it looks tastier, am I right?

Ohh…so easy–just berries and coconut milk! Why hadn’t I thought of that?!
Sounds like an easy breakfast I can do. Sometimes I get too busy with the day that I forget to have breakfast, especially if I need to spend time on it.
